GF DF Waffles

I don’t know about you but I love making Sunday breakfast with my little helper. He mixes the batter and keeps an eye on the waffle maker to make sure mom doesn’t burn the waffles. And the bonus - I make an extra batch with added protein powder to have during the week to keep my protein intake up.
GF DF Waffles (makes 7-8 waffles):
•2 cups of GF flour
•3 tbs of coconut sugar
•1 tbs baking powder
•1tsp sea salt
•1 1/4 cup of oat milk
•2 large or 3 medium eggs
•3 tbs oil (I prefer avocado oil but you can use coconut oil also)
•1tbs vanilla
Mix dry together and wet together then add the wet to the dry and mix to remove all the clumps. Pour 1/2 cup onto waffle maker
NOTES:
• for higher protein, I add 2 scoops of protein powder to a second batch of the above to have for the week. It gives me around 7.5 grams of protein per waffle.
• my favourite protein is by design for health. It's made from pure beef raised in Sweden w/o hormones, antibiotics, and free from GMO grains, grasses, and/or ensilage



Enjoy with organic maple syrup, fresh fruit, or with some nut butter drizzles on top.
